going away party and pumpkin gingerbread

Over the weekend I threw a spur -of- the- moment suprise-going- away- party for some friends who are moving to Germany! They were so suprised :) I love suprising folks.....






I'm a bit of a prankster. Originally we had intended on throwing an 80's party, but it got postponed till November, however I had not yet informed this certain friends about the cancellation and was VERY...so VERY tempted to let them come in their wigs and 80's costumes anyway. heehee That would've been hilarious!!!! Don't you think? Especially since I had people coming to the 80's party that didn't know them! Ha!







Anyway, I'm sorry I was really bad at the camera, since I was doing the planning ect. We hung balloons, streamers, and I made the most fabulous cake ever. Pumpkin Gingerbread with cream cheese icing! Ahhhh....I made homemade icing and wrote "We will miss you" on the cake and finished it with fall leaf sprinkles in different colors.


Pumpkin Gingerbread:


Ingredients
3 cups sugar (or substitute with honey) :)
1 cup vegetable oil
4 eggs
2/3 cup water
1 (15 ounce) can pumpkin puree
2 teaspoons ground ginger
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1/2 teaspoon baking powder


Directions
Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
In a large mixing, combine sugar, oil and eggs; beat until smooth. Add water and beat until well blended. Stir in pumpkin, ginger, allspice cinnamon, and clove.
In medium bowl, combine flour, soda, salt, and baking powder. Add dry ingredients to pumpkin mixture and blend just until all ingredients are mixed. Divide batter between prepared pans.
Bake in preheated oven until toothpick comes out clean, about 1 hour.



I put mine in a 9x13 and iced the top with cream cheese icing.



We laughed alot, talked about traveling, Germany, our futures, and played a game of Scattergories. There was a total of 7 kids running around and a baby. :)

Looks like a fun party!! I am sure they were blessed by your hospitality. That's funny because the Philippines was one of the places we were first interested in but we didn't fit into the requirements. Tell your kids thank you so much for helping bring our baby home.
